Good morning. Right now I'm just updating before I go to work. I haven't eaten anything yet but I might have a shake, I'm not really feeling too good right now.
3:30pm: I got home from work around 30 minutes ago. At around 12 I had half of a shake, I couldn't get any more down. I don't know why I felt so lousy but I'm alright now.
I decided to roast some cashews and almonds in case I ever wanted like a small snack during the week. Usually I just go into the container and grab a bunch but not this time.
I weighed out 2oz of raw cashews and 2oz of raw almonds and put them in a bag with a little water. Then I added 1/4 tsp of smoked paprika, chili powder, curry powder, and 1/8 tsp of cumin and black pepper. I roasted them at 300F for 20 minutes and took them out. After they cooled down I put them into little lunch bags weighing in at 1oz each.
I'm going to go grocery shopping, doing something different for dinner tonight. I'm pumped!
7:35pm: Oh man, dinner was so good! For awhile burritos, fajitas, and tacos have been up there with my all time favorite foods. Tonight I decided to make tacos within the limits of my diet. Who says you can't have tacos and be paleo at the same time?!
I took 1.4lbs of ground beef (10% fat 90%lean) and mixed it with 1/2 tsp cumin, 1/2 tsp coriander, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp chili powder, 1/2 tsp paprika, 1/8 tsp cayenne pepper, 3-4 cilantro stalks, and half of an onion. I cooked it in a skillet for about 15 minutes on high.
For the 'taco shells' I used iceberg lettuce leaves. You have to be really carefully when pulling them off so they don't rip.
I also topped my tacos with a tomato salsa. I diced 3 plum tomatoes, 1/2 of an onion, 2 cilantro stalks, 1/4 tsp black pepper, and lemon juice (1/4 lemon.)
My beef portion was 4oz even and I used some jalapeño sauce that I had in my fridge on my food. I served my tacos with half of a hass avocado, I think I'm so used to eating avocados that I almost didn't add that!
